In the pilot episode, Simon mentions that he paid to have River "snuk out in cryo", but in Serenity he breaks her out himself. Was this inconsistency ever explained?

Yes, on two different levels.

Joss has explained that he deliberately broke the continuity because it was too difficult for first-time viewers to understand what was going on unless Simon broke her out himself. (Otherwise, when he showed up on Serenity, viewers wouldn't have a clue who he was and what he was doing there.)

Within the story, we can simply say that Simon was keeping a few secrets from the crew, who he had (after all) just met and didn't know how far he could trust. As always, his primary motive was to keep River safe.

Your right this has been discused before. When Firefly made the jump to the big screen Joss decided it made for a better viewing experience to have Simon break River out himself. A slight difference in continuity for a better film. After the movie came out many people remarked upon the discrepancy between the film and the series. The consensus opinion that emerged from those discusions is that Simon lied about his involvement in the rescue.

I don't see the continuity problem.
Simon paid to get help breaking River out, and then to have her placed in cryo to make it off world surreptitiously, covering his tracks.
Like Doncoat said, Simon was not presenting the entire story to the crew in the pilot...

Am I missing something?

Yes, it looks like you are. His exact words were:

"If I funded them they could sneak her out in cryo, get her to Persephone, and from there I could take her... wherever."

This clearly implies that he was not involved in the escape, but rather paid to have others sneak her out of the government facility.

Joss' reasoning for changing how she got out does make sense, though.

A workaround for serching these forums is available. Use advanced google search and in the box that says search this domain type in fireflyfans.net then type whatever your looking for in the search box as usual. It's a bit clunky but it works.

Yes, this is what it implies, but one thing:
There is still the loophole that he may not have been telling the whole story to the crew for the sake of simplification.
His statement does not preclude that he might have... " funded them to make it possible for me to help her to escape, then they could sneak her out of the core planets in cryo to avoid detection, get her to Persephone safely, and from there I could take her... wherever."

Look, there's a continuity problem here. The mere fact that you need a loophole to explain things is evidence of it. I've already said that it makes sense why Joss decided to change things, so I'm truly at a loss for why you feel the need to deny there was ever any issue with the continuity.

Ahh yes, site search. Just FYI, there's an easier way to do so than going into the advanced search screen. All you gotta do is type the following in the search bar at google.com:

site:fireflyfans.net sneak her out in cryo

Yeah but I can never remember the correct syntax so I just do the advanced search thing. More work but (for me at least) easier to remember.

What I don't get was why Simon never mentions that underground again. (Except after River's Miranda-induced freak-out in Serenity, of course.) If he spent a year gaining their trust and giving them money, don't you think there might have been some later communication? Maybe that was going to come up in the now-never-gonna-happen season 2.
