Advice on graphic manipulation?

Not really Firefly-related, but I've seen some cool photoshoppery around here, so I figured why not.

I've been trying for a while now to generate some planetary maps (a small side-hobby of mine) for some stories I'm kicking around. Basically trying to avoid the SF cliché of entire planets covered by one single environment (Star Wars, I'm looking at you).

Anyhow, I've been using SimEarth to generate random coastlines and biomes (some of these planets have specific terrain requirements --a large desert, a land-locked ocean, remains of an interstellar civilization bombed back into the stone age, etc). I'll greyscale them and trace them out by hand later (to avoid the overly-pixellated coastlines and add some features below SE's level of detail).

Trouble is that the maps SE generates as screenshots are perfectly rectangular, and I want them in barrel-projection (basically grab the middle of both sides and pull). I know there's software out there that can stretch and deform images, but hours of google searching can't turn anything up. Anybody got any advice to offer?
