The reason it's not there is that the soundtrack mostly features music by Greg Edmonson, who did not write "The Hero of Canton." That song is by Ben Edlund, who wrote the episode "Jaynestown."

If you have a burning need to sing along, check out _On the Drift: Music Inspired by Firefly and Serenity_ by the Bedlam Bards. It has a cover of "The Hero of Canton" as well as a bunch of other shiny music.
